This week's Works for me Wednesday is a themed event. We're sharing recipes that can be made quick and easily with 5 ingredients or less. I'm so excited about this one! I love quick and easy recipes!
With a busy schedule, three kids and a man who are constantly hungry, I constantly feel the need to have meals at my fingertips. Unless, of course, they're planning on eating Chef Boyardee and Burger King three meals a day. Yuck.
So without further delay, I give you two of my favorites:
Oven Fried Chicken Your Kids Will Eat
*this recipe is basically the same as this guy's, he uses fancy bread and says the bone should be in - I've found it doesn't have to be*
Skinless chicken pieces (bone in or out, doesn't matter)
Two or three eggs
At least a tablespoon of Dijon mustard
Breadcrumbs
Seasoning
1. Preheat the oven to 425. Beat up the eggs with the mustard in one bowl and mix the breadcrumbs up with plenty of seasoning on a plate. We like to use Cajun seasoning and salt and pepper but you can use whatever you like. Coat a broiler pan with canola cooking spray.
2. Dredge chicken pieces in egg mixture and then roll in breadcrumbs so they're nicely coated.
3. Place chicken pieces on broiler pan and spray a little canola on top. Bake for 40 to 45 minutes.
It's delicious and SO much better for you than that oil fried chicken.
Super Quick and Easy Hummus
*this one was adapted from this recipe, the only difference being I don't use roasted garlic and less lemon juice*
1 can chickpeas
2 tablespoons chopped garlic from a jar (you can use fresh garlic from a press if you'd like)
1 tablespoon olive oil
a splash of lemon juice
oregano to taste
Mix everything up in a food processor until it's smooth. If it's too thick, add a little more olive oil until it's the way you like it. If you're feeling froggy you can throw in black olives, red peppers, whatever you might like in your hummus. Serve with pita or crudites, spread it on sandwiches, it's fabulous!

Mmmh love fried chicken and it loves my hips and bum. I'll be giving this one a try, maybe this weekend.

I'll definitely have to try your hummus recipe. I've tried to make my own before, but all the recipes called for tahini and I found it gave it a kind of funky taste. Yours sounds easier and probably tastes much better!

Michelle, that's the best part about this hummus! I've made it with and without the tahini and I like it without better. I also like the grocery store bought hummus which I'm sure has tahini in it, but when I make it myself it's sort of weird.
Isn't oven-fried chicken the best!? I laughed when I saw you posed this, because I posted something very similar, only using Dijon and Worcestershire sauce instead of egg. I've never made mine with a bone, I don't see why you need it!

Oh man, I love sesame seeds and would never want my hummus without tahini! but some of the tahini I've bought was a bit too much like peanut butter, so I suppose getting a shoddy jar could cause it to taste bad. try using lime instead of lemon some time too. yum!
